Baked Salmon with Mango & Sweet Potatoes

Mummy had forgotten where she got this recipe from. Anyway she saw some big and nice mangoes yesterday at the supermaket so she decided to prepare this dish for us. Simple and hopefully it's nice.

Salmon With Mango & Sweet potatoes
1. Slice of Salmon
2. Sweet potatoes
3. Mango
4. Olive oil

- Rub salmon with rumeric and salt. Let stand for half hour, rinse off.
- Slice sweet potatoes thinly.
- Dice Mango.
- Pour a little olive oil into base of baking tin.
- Lay slices of sweet potatoes at the bottom, then salmon, and pour mango over it all.
- Bake for 20 mins, take out and stir to ensure salmon gets cooked evenly.
- Bake for another 20 mins.
- Remove from oven and serve.
- Mash the fish if your baby is still young.

Mummy says we had better finish this else she would have cut her finger for nothing. Yes, our clumsy mummy accidentally cut her thumb when cutting the sweet potato. That explains why we only have half a sweet potato left cos the other half was stained with her blood. yucks ...
