Mummy got inspired by Aunty Elaine with her recipe for the Swiss potato rosti. She had always liked this dish from Marche and thought it'll be difficult to prepare. However Aunty Elaine told her it's rather easy and not much ingredients are needed therefore she decided to try it out today.
The dish came out pretty well done except that it doesn't stick nicely together. We like it too and we call it the "potato noodles" cos we see the strips of potatoes.
Ingredients For a family of 2 adults and 2 kids2 Potatoes
Half an onion; finely chopped
1 slice of Bacon/Ham; finely chopped (optional. You can do without these if you are going to add cheese or eat with other meat dish)
1 Egg, optional
Butter
Salt and pepper to taste
Method- Boil the potatoes in their skins for 15 minutes until they are tender.
- Remove the pan from the heat, drain the potatoes and cool them under cold running water.
- When the potatoes are cool enough the handle, strip off the skins.
- Grate the potatoes coarsely in a large bowl.
- Add the beaten egg in and mix well with the potato strips. (omit this step if you are not adding egg)
- Heat the butter in a large pan (Do not use oil as the taste will be real different)
- When the butter has melted, add in the onion. Fry till fragrant then add in the bacon/ham, salt and pepper. (Do not add in too much salt if using bacon/ham)
- Next pour in the potato mixture.
- Lightly pat the mixture into a round cake with a spatula.
- Cook over low heat until the underside is crusty and well-browned.
- Use a serving dish to cover on top of the rosti and turn over with the rosti on the plate.
- Then slide the rosti back into the pan to cook the other side till crisp and well-browned too.
- When done, use the same way to put onto the plate, cut into wedges and serve immediately.
